Ed's suggestion is probably the easiest to implement.   Just have
every character make a mark for each HP recovered by potion
and tack on an extra year to their ages when they reach 180.

you'll have to grandfather it in though -- it would be quite a
surprise for the current players in your campaign to wake up
and find themselves years older because of all the potions
they've quaffed over the years.
