Most likely because you use tabs between the columns.  The tab key
doesn't add 8 spaces to the line of text - it adds a special character
which is interpreted by the application reading the message, which may
not interpret it the same way as the app you created the table with.

The two rules for creating tables for email are:
1) use a fixed-width font like Courier
2) always use spaces instead of tabs.
