My view is the "correct" answer on what determines prices is what Neil wrote: "perceived value" plus other factors.

Economics is not a hard science. It's sociology, which is based on ideas. In other words, it doesn't exist; it's a set of invented ideas.

You may be able to make some true statements about actual things, of course. For example, if someone only has so many resources and so much money, and his trades whittle him down to less and less, he will run out of resources and money until something different happens.

Prices don't necessarily always adapt to conditions.

Perceived threats can also be part of the ideas that lead to prices. What peasant is going to try to insist on high prices for a nasty warrior in town who looks like he could easily kill anyone in the peasant's village? What if a king or Mnoren passed through and ordered that all daggers should cost $10? ;-)
