DWT, Shapeshift is for cursing princes and the like, it doesn't wear off.

And a -4 DX for lack of Talent is no big deal when you're starting in the 30s.

I'd rule that, after the Shapeshift wears off, you have a zombie cow.
Even if you allowed the transformation, the IQ of the zombie is too
low to have learned two-handed sword (and since the cow did not
know how to do that beforehand ...)
