Probably all three. Dwarf-owned farming and ranching in high protected
places, trade with lowlanders, and mushrooms. Lots of mushrooms.

Following this idea with a bit of Niven, don't walk into fogs in
dungeons. The world on the other side of the fog won't be your own.
