Placing a man on a horse using a crane was related to the flexiblity of  the
knee joint of the armor.  Armor was heavy but not heavy enough that you
could not fight in it on the ground.  A man in armor, such as you say, could
have mounted a horse by himself but not without struggling to straddle the
horse with his leg.
