I think of summoned creatures as 'illusions with substance'.  Or put another way 
summoned creatures are to illusions as illusions are to images.  Basically the 
wizard temporarily wills into existence the creature described by the spell, it 
doesn't come from anywhere.  Since he created it he controls it, unless somehow 
subverted.

Of course the spells are VERY specific as to what they summon, even down to the 
weapon that the myrmidon is wielding when he appears.
