Not much in combat stats, but then, there's no difference in combat stats
between orcs and humans in TFT, either, and ITL mentions that both species
have many sub-varieties, but there can be other important differences even
if the combat stats are the same. Though I chimed in with the official
answers, the nice thing about the vague descriptions is that it encourages
the GM to fill in with interesting details that the players will get to
wonder and learn about. Those can of course include whatever differences
you want in combat abilities. ITL also says to feel free to add new
species, which of course can include varieties of existing species,
without contradicting what TFT books say at all. TFT campaigns I ran and
played in had fairly common variant species (of slimes, orcs, humans,
wights, goblins, hobgoblins, and others). I also kind of like the idea
that one or more of those big species, or sub-breeds thereof, might vary
more or less in size and/or abilities.
